Tofu Mayonnaise

  • 1 Cup mashed soft tofu (about 8oz)
  • 2 T lemon juice
  • 1 T Dijon Mustard
  • 1/2 tsp salt
  • 2 T finely chopped shallots (about 1 large)
  • 1 clove garlic, finely chopped (about 1/2 tsp)
  • 2 tsp olive or low fat oil
  1. Place all ingredients, except oil in blender or food processor.
  2. Cover and blend until smooth.
  3. With blender on, add oil by drops.
  4. Cover and refrigerate in glass or plastic container at least 1 hour until chilled.
  5. About one cup of Mayo
