Tarragon Chicken

Although this wasn't designed as a low-fat recipe, there's absolutely NO added fat, just what comes naturally with the chicken!
  1. In a crock pot, layer chicken breasts with a blend of 3 tablespoons chopped parsley and 1 teaspoon of tarragon.
  2. Pour in enough dry, white wine to cover the chicken.
  3. Cook approximately 1 hour on high, then on low for 6 to 8 hours (can cook longer).
To lessen the fat content even more, remove the skin from the chicken and brown lightly in a no-stick pan or with a no fat spray. The chicken is more attractive browned, but that's optional.

You could do the same recipe in less time on the stove top. Use a good deep pan and keep an eye on it to make sure the chicken doesn't scorch!
