Southwestern Stir-Fried Shrimp

I make this as often as I can; not only tastey but pretty.
  • 2 T lime juice
  • 2 tsp cornstarch
  • 1/2 tsp ground cumin
  • 1/4 tsp salt (optional...I don't use it anymore)
  • 1/4 tsp pepper (white if you have it)
  • 1 1/2 pd raw large shrimp, peeled and deveined (about 24)
  • 1 1/2 Cup chopped yellow bell pepper (about 1.5 medium)
  • 1 1/2 Cup chopped red bell pepper (about 1.5 medium)
  • 1 Cup chopped red onion (about 1 medium)
  • 1/3 Cup chicken broth (optional, I don't use it)
  • 2 cloves of garlic, finely minced
  • 1/8 tsp ground red cayenne pepper
  • 2 T chopped fresh cilantro leaves
Mix lime juice, cornstarch, cumin, salt and pepper in medium glass or plastic bowl; stir in shrimp. Cover and refrigerate at least 1 hour.

Spray 12-inch skillet with nonstick cooking spray. Cook bell peppers, onion, (broth), garlic, red pepper and cilantro in skillet over medium heat for about 2 minutes, stir constantly. Stir in shrimp mixture. cook 3 to 4 minutes until shrimp are pink. 6 servings
