Simple Lemon Chicken

(serves 2)
  1. Coat a frying pan with your favorite non-stick fat-free cooking spray (I use T-Fal cookware and don't use anything)
  2. Brown two boneless, skinless chicken breasts
  3. Add 1/4 cup lemon juice and 1/2 cup water, simmer on low for about 20 minutes until chicken is cooked through, turning occasionally and adding water as needed.
  4. Add desired seasonings (I use lemon pepper)
  5. Serve with salad
