Barbecued Pulled Pork Sandwiches

Serves 8
  • 1 lean pork shoulder roast (2 1/2 pounds)
  • 1 bottle (14 ounces) barbecue sauce
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon packed brown sugar
  • 1 medium onion, chopped
  • Hamburger buns or hard rolls
  1. Place pork roast in slow cooker. Cover, cook on low 10 to 12 hours or on high 5 to 6 hours.
  2. Remove pork roast from slow cooker. Shred with two forks. Discard cooking liquid. Return pork to slow cooker and add barbecue sauce, lemon juice, brown sugar an donion. Cover and cook on low 2 hours or on high 1 hour. Serve pork by itslef or on hamburger buns or hard rolls.

Tip

For a 5, 6 or 7 quart slow cooker, double all ingredients except for the barbecue sauce. Increase the barbecue sauce to 1 1/2 bottles (about 21 ounces total).
