Lowfat Lo-Cal Barbecue Sauce

This barbecue sauce has lots of ingredients and is really delicious. It keeps well and it can be used for beef, pork, chicken or veal

Makes 3 cups, 24 servings (1 ounce each)
  • 1 t. olive oil
  • 1 med. onion
  • 2 cloves garlic, minced
  • 2 T. white vinegar
  • 1 cup black coffee
  • 1 t. Dutch cocoa
  • 1/2 cup beer
  • 1 cup chili sauce
  • 1/4 cup lite soy sauce
  • juice and grated peel of 1/2 lemon
  • 2 T. Worcestershire sauce
  • 2 T. steak sauce
  • few drops hot pepper sauce
  • 1 T. dry mustard
  • 1/4 t. of any or all of the following: celery seed, thyme, tumeric, marjoram, paprika, red pepper, ginger
  • 2 T. horseradish
  • 2 bay leaves
  • 2 t. cornstarch
In a medium-sized, non-stick saucepan, heat oil. Saute onion and garlic for 2 min. Reduce heat and blend in remaining ingredients, whisking in the cornstarch last. Simmer for one hour.
