Grapefruit Chicken Salad

  • 3 cups cubed cooked chicken or turkey
  • 3 cups chopped apples (any variety but I like the green ones best) - about 3 medium
  • 2 cups red grapefruit sections - about 2 large fruit
  • 3/4 cup chopped peeled cucumber - 1 med large
  • 5 cups watercress sprigs - about 2 large bunches
  • Grapefruit Dressing (below)
  1. Prepare Grapefruit Dressing in large bowl.
  2. Add remaining ingredients except watercress; toss.
  3. Cover and refrigerate about one hour or until chilled.
  4. Serve on watercress.



Grapefruit Dressing

2/3 cup plain nonfat yogurt
1/2 cup finely chopped peeled cucumber
3 T grapefruit juice
2 T cholesterol free reduced cal mayo or salad dressing (see recipe for Tofu Mayonnaise)
1 tsp prepared horseradish
1/4 tsp pepper




Nutritional Info for Chicken and Dressing:

Six servings (measure and break it up into 6)
Nutritional Information per serving:
Calories=350
Protein=45
Carbs=30
Fat=7
    Unsat=5
   Saturated=2
(if you use above Mayo; Tofu mayonnaise has no saturated fat)
