Crispy Deviled Chicken

An alternative to southern fried chicken and just as good IMHO

  • 1/3 C cholesterol, fat-free egg product or egg substitute
  • 2 T chicken broth
  • 1 T Dijon mustard
  • 1 clove garlic, finely chopped
  • 1 1/2 C dry whole wheat or white bread crumbs (by commercial and check labels :o)
  • 3 T fresh or T dried basil leaves
  • 1 tsp paprika
  • 1/4 tsp (white) pepper
  • 4 boneless/skinless chicken breasts
Heat oven to 400°. Spray shallow roasting pan with nonstick cooking spray. Mix egg product, broth, mustard and garlic in small bowl.

In separate container, mix bread crumbs, basil paprika and white pepper. Dip each chicken into egg mixture and shake to remove excess. Coat with bread crumbs mix. Place in pan. Bake uncovered about 20 minutes, or until juices run clear. 4 servings
