Broiled Caribbean SwordFish

The Papaya Salsa is also great with grilled chicken, or the beginnings of a great meatless salad.
  • Papaya Salsa
  • 1/4 C lime juice
  • 1/4 C grapefruit juice
  • 1 T grated lime zest
  • 1/4 tsp saltt
  • 1 clove garlic, crushed
  • 4 swordfish or shark steaks, about 1" thick (about 1 1/2 lbs)
Prepare Papaya Salsa. Mix remaining ingredients, except fish steaks, in ungreased square baking dish (8" X 8" X 2".) Add steaks; turn to marinade. Cover and refrigerate at least 2 hours.

Set oven control to broil. Spray broiler pan rack with nonstick, fat free cooking spray. Remove fish from marinade; reserve marinade. Place fish in broiler pan; broil with tops about 4" from heat source, for about 16 minute. Turn and brush wih marinade after 8 minutes, until fish flakes easily with fork. Serve fish with salsa.

Papaya Salsa

  • 2 C chopped, seeded peeled papaya (about 1 large)
  • 1/4 C finely chopped red bell pepper
  • 1 T finely chopped green onion
  • 1 T chopped cilantro leaves
  • 2-3 T grapefruit juice
  • 1/8 tsp salt (optional)
Mix all ingredients. Cover and refrigerate until serving time.
