Beef with Tomato and Rice

An easy main dish for company

  • Marinated Tomatoes
  • 4-pound beef tip, bottom round or rolled rump roast.
  • 2 1/3 Cups uncooked regular long grain rice
  • 4 2/3 Cups water
  • 2 tsp salt
  • 1 tsp turmeric
  • 1/2 cup chopped fresh parsley
  1. Prepare Marinated Tomatoes.
  2. Heat oven to 325°.
  3. Trim fat from beef roast.
  4. Place beef on rack in shallow roasting pan.
  5. Insert meat thermometer so tip is in center of thickest part of beef and does not rest against fat or bone.
  6. Roast uncovered, about 3 hours or until thermometer registers 160° (medium doneness.)
About 30 minutes before beef is done, heat rice, water, salt and turmeric to boiling; stir once, cover and reduce heat. Simmer about 14 minutes, remove from heat; fluff rice with fork. Cover and let steam 5 to 10 minutes. Stir parsley into rice. Cut beef into 1/4-inch slices, arrange on bed of rice, cover with Marinated Tomato. 16 servings

Marinated Tomatoes

  • 4 med tomatoes, cut into 1/4 - inch slices
  • 2 T olive or vegtable oil
  • 2 T red wine vinegar
  • 1/8 tsp salt
  • 3 drops red pepper sauce
  • 2 clove garlic, minced
Place tomatoes in glass or plastic dish. Mix remaining ingredients; pour over tomatoes. Cover and let stand at room temperature about 3 hours.
